Daphne Oz Gave Us Her Favorite Summer Recipe

Ice pops are always high in demand when the temperatures start to rise, especially with kids! In our new issue, summer cover mom Daphne Oz opens up about how to get kids to be adventurous eaters and it all starts with putting healthier spins on things you already know they love— so why not try it Oz’s Sour Apple Ice Pop recipe?

We asked the new mom of three for her favorite summer recipe and she admits, this one ranks high on the list!

“I’m the girl who wants lemonade with double lemon and half the sugar, and this is my kind of ice pop— more tart than sweet, and so refreshing on a hot summer afternoon,” Oz shares in her latest cookbook, The Happy Cook. “If you have kids, let them mix and match their own blends. It’s an easy way to cut back on extra or artificial sugars that are rampant in packaged pops.”

Sour Apple Pops

Makes about 6 pops, depending on the size of the molds.

Ingredients

4 Gala or Pink Lady apples, peeled and quartered
1 English (seeded) cucumber, quartered, or 2 Persian (mini) or Kirby cucumbers, halved
3 limes, peel removed, fruit quartered

Directions

In a juicer, juice the apples cucumber(s), and lime.

Divide the mixture among ice pop molds, then refrigerate at least 2 hours; getting the pop blend as cold as possible before freezing helps ensure the pops aren’t icy. Freeze until hard, at least 4 hours or preferably overnight.
