Now that school is back in session, you’ll need to send your Mini crew off in the morning with a healthy breakfast in their bellies. But trust us when we say we’re right there with you on lacking the time, and often energy, to whip up a Martha Stewart level feast before the clock strikes eight.

We turned to our Mini in-house foodie, Karla Salinari of OurFlipSideLife, for an answer to our culinary woes and a go-to breakfast treat to file away under our Back to School recipes. Ingredients

2 eggs
1 ripe banana
1/2 tsp vanilla extract
1/4 tsp cinnamon
Pinch of salt
Ghee for frying
Maple syrup for topping (optional)

Directions

Add eggs, banana, vanilla extract, cinnamon, and salt into a blender and blend on high until smooth. Grease a pancake pan with ghee.

Scoop mixture into the pan a little at a time and cook 1 to 2 minutes on each side. Repeat with remaining mix.

Serve and top with maple syrup or honey. Enjoy!
