The holidays may be over, but there aren’t any rules that say the cookies need to be put away for the new year. In fact, we’re all in favor of a good cookie recipe no matter if it’s a weeknight or a weekend! Soon-to-be mom of three and designer Rebecca Minkoff recently shared this delicious oatmeal peanut butter cookie recipe with us (her go-to!) and we just knew we had to spread the cookie love!

Oatmeal Peanut Butter Cookies by Rebecca Minkoff

Yields: 4-6 dozen cookies; Freezes well.

Ingredients

3/4 cup white sugar

3/4 cup brown sugar

1 cup margarine or butter

1 cup chunky peanut butter (or almond butter)

2 eggs

1 tsp baking soda

2 tablespoons hot water

5 cups old-fashioned oats

1 12 oz bag chocolate chips

Directions

Cream together the first give ingredients. Gradually add in last four ingredients. Scoop spoonfuls onto greased cookie sheet. Bake at 350 degrees for 10 minutes.
